Master Chef Behind the Pigout

We love the month of October because it pays homage to one of our favorite meats on the planet…pork! That’s right ladies and gentlemen, October is National Pork Month. And here at Isle of Capri® Boonville, we are taking full advantage. We’ll be offering plenty of mouthwatering delicious pork recipes for our guests, but more on that later. First, read on to learn more about one of our executive chefs, Jason Shreves & his best pork preparation advice.

Who is Chef Jason?

Chef Jason Shreves has been a part of the Isle of Capri Boonville family since 2011. He acquired a degree in Culinary Arts from the prestigious school, L’Ecole Culinaire. Chef Jason has years of experience working in the casino industry. We love him so much that he heads up not just one of our restaurants, but all three restaurants at the Boonville property. Chef Jason always brings a unique and fresh spin to the recipes he creates. But enough bragging. Chef Jason loves pork just as much as we do, and has a lot to say on the subject. So get your pens and notepads handy.

In chef's opinion, what's the best method to prepare pork?

Slow-cooking. Slow- cooking pork offers an incredibly tender result, and gives you a ton of flavor. The best thing about the slow-cooking method is that you can buy more economical cuts of pork, such as the shoulder, and still end up with a mouthwatering dish.

If you could only eat one pork dish ever again, what would it be?

I do love a BBQ pulled pork sandwich on a pretzel roll, onion straws, and a vinegar slaw.

What's the best way you've ever served bacon?

Bacon served as a dessert item. Who would guess that dark chocolate and bacon pair wonderfully together?

What is the most unique dish you've ever seen bacon in?

Black peppered bacon ice cream.

What's better, ribs or bacon?

Ribs of course! Bacon is delicious, but there is only so much bacon I can handle. Pork belly, on the other hand, is delightful.

What's one must-know rib-cooking tip?

Your seasoning. At the Isle, we focus on sweet and savory in our rib rub. I would do the same at home.
