When is Tuesday not just an ordinary day of the week? When it's Fat Tuesday --or in Cajun French-- Mardi Gras! Mardi Gras traditionally marks the beginning of the 40 days of Lent, a season of fasting and "giving up" luxuries and pleasures such as rich food or desserts. For instance, during Lent, people give up eating red meat, instead choosing fish until Easter Sunday. The Tuesday evening before Ash Wednesday therefore has become a time to indulge and enjoy, and Mardi Gras is known as a fun evening of enjoyment and dining. Down South in New Orleans they say Laissez les bons temps rouler, or "Let the good times roll." The good times are rolling here, too.
